It is a welcome healthy addition to the busy wellness aficionado’s arsenal as it has all the hallmarks necessary to make it a perfect dish – tasty, healthy, fairly quick and straightforward and can be prepped in volume for multiple meals.
Coconut milk is a superb addition to this dish. Be sure to purchase coconut milk, not cream of coconut, which contains a great deal of sugar.

INGREDIENTS
1/2 cup basmati rice
2 teaspoons olive oil
12 ounces beef top round steak, trimmed of all visible fat, thinly sliced
1/2 teaspoon salt
1 onion, chopped, about 1 cup
1 tablespoon peeled, grated fresh ginger
2 cloves garlic, minced
2 cups pineapple cubes
1 medium apple, cored and chopped, about 1 cup
1 teaspoon curry powder
1/2 teaspoon ground cumin
3/4 cup light coconut milk
2 tablespoons lower-sodium soy sauce
1 tablespoon sugar
DIRECTIONS
- Cook the rice according to package directions, omitting any fat.
- Heat 1 teaspoon of the oil in a large nonstick skilletover medium-high heat.
- Sprinkle the beef with the salt and add half to the skillet; cook, turning once, until no longer pink, 45 seconds per side. Remove from the skillet.
- Repeat with the remaining beef; set beef aside.
- Wipe out the skillet and heat the remaining 1 teaspoon oil.
- Add the onion, ginger, and garlic; cook, stirring occasionally, for 1 minute.
- Add the pineapple and cook for 2 to 3 minutes, or until starting to brown slightly.
- Stir in the apple and cook until heated through, 2 minutes.
- Add the curry and cumin; cook until fragrant, 30 seconds.
- Add the coconut milk, soy sauce, and sugar; reduce heat to medium and simmer 2 minutes.
- Add the beef and cook until hot, 1 to 2 minutes. Serve over the rice.
